Slow roasted shoulder of Pork with Parsnip and an Apple Mash and Calvados Jus.
It is one of our signature dishes, a perennial favourite amongst our customers. The secret of the 'fall off the bone' tenderness and crispy crackling is in part because we cook it very, very slowly - 16 hours in total in a special snazzy oven we got specially for the purpose and because we use local quality pork that tastes delicious.
